INDONESIAN REMPEYEK (INDONESIAN CRACKERS)
Widely popular from West to the East of Indonesia, especially on the island of Java, Rempeyek can be made with peanut topping or anchovies
Here is how I prepare it.
Ingredients:
1/2 liter of vegetable oil
2 cloves of large garlics – grinded
1/2 tsp of ground corroander
kaffir lime leave (take out the stem and thinly slice the leave) – optional , leave it out if you cant find kaffir lime leaves
11/2 pinch of salt
300gr of rice flour
15gr of tapioca flour
1 egg
1 pinch of turmeric powder
3tbs of coconut milk
Cooking Method:
- In a large bowl mix all of the above ingredients except the cooking oil
- heat oil in a wok, pour the mixture on slightly abovre the oil level so it forms drips as the mixture solidified by the heat. Each of the solidified rempeyek will slowly fall into the cooking oil by themselves continue cooking on medium high heat until crispy and golden brown.
