CORNISH PASTIES

I love love love Cornish Pasties and if I had to wait until I can go to Cornwall to have it then I might have to wait forever what with covid and travel restrictions being imposed everywhere around the globe.

 

 

Here is how I prepare it.

Ingredients

 

The Dough:

500gr of baker’s choice flour or you can subatitute it with  strong white bread flour

1 pinch  of salt

125gr of unsalted butter (cold)

125gr of lard, beef tallow or vegetable shortening

Approximately 160ml or cold water

1 egg – beaten

 

The Filling:

 

1 large waxy potato – diced

1 medium onion – diced

Approximately 200gr of Swede – diced

400gr of beef skirt – cut into small chunks

 

Salt & Pepper for seasoning

 

Cooking Method:

  • Use your hands or food processor to mix butter, flour  and salt until you get crumble/breadcrumbs consistency,  add some water if too dry to shape, add the water litte by little andf you have to eyeball it, you may not need to use the whole 160ml water, knead unti malleable, wrap it in cling film and leave in the fridge for approximately 1 hour
  • Mix all the diced vegetable ingredients in a bowl, season with salt  & pepper
  • In a separate bowl season the beef with salt & pepper

 

 

  • preheat your oven to 180 – 200 degrees Celcius.
  • Time to cut the dough.  I used the inner of size 18 cake tin as a mould, but feel free to use whatever you have to create your own desired pasty size. Add a spoon of vegetable mixture, add the beef on top of it, add a pinch of butter and sprinkle some flour, during the baking process, the flour when combined with  the melted butter and the juice from the beef will thickenso it will bnd  the filling nicely.
  • seal around the edge with wash. Use your fingers to crimp around edge to seal the pasty. eggwash each of the surface, stick a skewer or a sharp knife to create a whole for the steam to come out to avoid burst of the crimping  during baking.
  • Bake for 50 – 60 minutes.
  • Once baked and out of the oven,leave it to cool for around 15 – 20 minutes  befotre start eating.

 

Cornish Pasty is a meal on its own it has carb, prptein and vegetable in each of them.
