GRILLED JUMBO PRAWNS
This dish is very simple to make
WHAT YOU NEED TO MAKE GRILLED JUMBO PRAWNS
1.5 – 3kg of jumbo prawns – cleaned and cut in half lengthwise
5-18 sprigs of spring onion – chopped
5 – 7 cloves of garlic – finely chopped
1 pinch of chili flakes – (optional)
150gr of butter – this may seem like a lot but you will appreciate it later
1 tsp of fish sauce – or alternatively you can use 1 anchovy fillet and 1 tsp of its brine
Juice f 2 lemons/limes
THE PRAWNS :
- Half the prawns lengthwise, marinate with olive oil, salt, pepper, and lemon/lime juice, leave to marinate in the fridge for at least 30 minutes.
- Whilst prawns are marinating in the fridge prepare the sauce
THE SAUCE :
- Heat butter in a wok on medium heat, add garlic, and spring onion, keep stirring to avoid getting burnt.
Add a dash of fish sauce/anchovy , this will add that umami flavor to our sauce, set aside to cool
- Heat griddle on medium-high heat, place each hafted prawns, shell side down, leave them to grill for approximately 2 – 4 minutes. Prawns don’t take too long to cook but for jumbo ones I’d give it a bit longer, when they start turning pink that’s when they are cooked.
- Transfer the prawns to a baking tray, shell side down. Spoon the sauce on to each prawn, place the pu the tray in the oven for 3 – 5 minutes on 100C
- Serve the jumbo prawns while they are hot, with side dishes of your choice or grilled asparagus or salad
